We have admired the work of our colleagues at Phil and Sebastian and Onyx Coffee Lab for a long time; sharing many producer partners, often meeting  through mutual friends on trips to origin.

We were excited to be asked to join this project, highlighting the work of Mauricio Shattah at La Negrita in Colombia. Each roastery has sourced a different lot from Mauricio, and roasted it to reflect their practices and flavor preference.

We’ve been working with Mauricio since 2017, developing a shared understanding of his coffees and our preferences. We cupped this lot with Mauricio in Bogotá last month, and immediately recognised the profile: bright white florals, aromatic citrus, and a milky oolong finish, everything we’ve come to appreciate in his Geisha lots.

In this package, you will receive 80g of each expression of Finca La Negrita; a natural Geisha by Onyx, a semi-washed Geisha by P&S, and a Honey Geisha by La Cabra.

Some of the most remarkable coffee producers in the world work with equally talented roasters - people who understand how to bring out the best in each coffee, highlighting its story and character. Every time we visit these producers, we’re blown away by the care and craftsmanship that goes into their work, and by the incredible roasters who take that coffee and make it shine. 

Project III is a celebration of both. Three roasters, each selecting a coffee from the same producer and roasting it in a way that best represents their approach. One producer, three perspectives - showcasing the depth, range, and skill that go into every step of the journey from farm to cup.
