La Cabra New York
Our location in the East Village is our prelude. Our first foray into New York’s colour, noise and bustle; a source of inspiration for so many years. East Village is the anchor to which we pin our upcoming coffee bar in Soho, a means with which to develop our involvement in New York’s thriving coffee scene.
We move forward with the confidence to continue on our road, in our way. We seek inspiration outside our own field, collaborating with talented creatives who share our drive, passion and curiosity about life. Each of these connections, however fleeting, has shaped how we create and share coffee experiences.
Our everyday work completes coffee’s journey from field to cup; we are simply messengers, representatives of the work that has gone before. In our roles as buyers, roasters and baristas, we are captivated by the origins of our raw material.
Our thoughts often wander to the field, the lush verdure, the cool touch of the thinning mountain air. Each coffee is created by a set of intentional decisions; we explore the influence of each on the journey from well-nourished tree to delicious and transparent cup. These decisions are taken by skilled individuals, those who pour their work into the field, those who give their care to each plant, to each ripening cherry.
Our role is to welcome you to this world, to take you with us on our journey in coffee. This is our dream, to share those moments where a cup of coffee forces you to slow down, to think, and to appreciate the journey. Coffee is an illustration of our dream in motion, one that brings together terroir, varietal and the skilled hand of processing.
It's the alchemy of roasting that turns the potential of a dull seed into a complex piece of poetry, an ode to the land that finds its way to your cup. We dedicate ourselves to our work at journey’s end; to sharing a cup, to the culminating moment of the first sip.
