For each Sunday as Christmas draws closer

Advent marks the four Sundays leading up to Christmas. In Denmark, each one is celebrated by lighting a new candle, with time set aside for gathering and sharing with those closest to us.

Our Advent Calendar follows the same rhythm: four coffees, one for each Sunday. Each has been selected from producers and farms we have worked closely with throughout the year, offering a glimpse into the people and the work behind the cup.

Hacienda La Papaya, Ecuador

Hacienda La Papaya is a family-owned farm run by Juan Peña, an agronomy engineer. The farm lies in Saraguro country in Loja, where coffee is still worked through the minga, the Andean tradition of communal labour.

The coffee grows high on steep hills between 1800 and 2200 masl, in volcanic clay loam. Here, Juan grows a washed Sidra, dried over 9 to 18 days to let variety and terroir show through, with notes of cherry, cinnamon and black tea. Alongside it is a Typica Mejorado, fermented for 120 hours in sealed oak barrels that previously held rum, with notes of strawberry, orange and hibiscus.

Café Granja La Esperanza, Colombia

The Herrera family at Café Granja La Esperanza grows coffee at Finca Potosí, on the steep slopes of the Andes in Valle del Cauca, Colombia. Over several generations, the family has developed its own variety, Mandela, starting from Caturra plants and later crossing them with Timor Hybrid and Ethiopian landrace material.

The family also grows Pink Bourbon on a small 2.39-hectare plot. This lot is a competition selection, double-fermented and processed as a natural, with notes of strawberry, red apple and cacao nibs. Alongside it is a natural Mandela, fermented in open tanks for 48 hours and slow-dried, with notes of blueberry, plum and stone fruit.
