Fractal
As has become a tradition for us towards the end of the year, we have again worked closely with several quality-focussed coffee producers to source some of the finest coffees we can get our hands on; this year’s Fractal collection is a representation of where we see the pinnacle of modern coffee in 2024.
Each has been sourced from a talented professional; their attention to detail results in intentionally created flavour profiles, a combined reflection of terroir, varietal, and their personal touch, shaped by their decisions in the field, in harvest and in processing.
This year, the Fractal collection consists of four coffees;
The Aguilera family have produced a complex and delicately floral washed Geisha at their Carmen Estate, on the Baru Volcano in the western Panama highlands.
Juan Peña’s meticulous approach at Hacienda La Papaya has shaped his washed Geisha, showcasing heady perfumed florals and a crisp and clean cup.
The team from Granja La Esperanza once again bring us their distinctive Sudan Rume aromatic profile, here backed up by waves of soft ripe fruit and a deep rich sweetness in this naturally processed edition.
Finally, the Lamastus family continue to produce excellence in Boqueté; the anaerobic fermentation of this lot from their Elida Estate showcases floral aromatics atop a wild base of stewed berries.
