Sami’s journey began four years ago when he envisioned a Scandinavian-inspired café. He saw an opportunity for a space where high-quality, lightly roasted coffee and meaningful conversations could thrive. Olive was born with a mission to introduce people to the creative world of coffee and share knowledge with curious customers.

We’re proud to collaborate with Sami and his team, who have transformed Olive into a destination for those who value quality and creativity in coffee.

At Olive, every customer is treated as an individual. Sami starts his day with a pour-over, his current favorite being the Potosi Natural XO - a seasonal brew with rich cocoa notes, sweet wild berries, and a touch of acidity. It’s popular among the café’s regulars.


Our partnership with Olive Café highlights our shared commitment to precision and purity in coffee roasting, allowing each bean’s true character to come through. Whether in an espresso or a filter brew, Olive serves our coffee with the same care we value.

Together, we’ve created a menu that showcases coffee’s diversity. From espresso paired with a cannelé to pour-overs, customers can explore different extraction methods. Sami’s partner Alexis particularly enjoys a cortado with oat milk, especially during winter.


Olive’s dedication to quality extends beyond the beans. Every detail, including water quality, is carefully managed to ensure optimal brewing. Recently, they upgraded their reverse osmosis filtration system to improve extraction, using water at 65 ppm for manual brews.

Sami’s commitment to coffee is reflected in the care and creativity he brings to every brew. He enjoys experimenting with techniques, such as using an EK 43 grinder and precise brewing parameters for the Potosi XO Natural.


Our collaboration with Olive Café allows us to share our love for coffee with a wider community. We’re especially excited as Sami opens a second location and begins incorporating a bakery element to Olive. 

His dedication to his craft, along with this new venture, makes Olive more than just a café—it’s a place where the excellence of coffee and baked goods can be experienced in every visit, and we’re thrilled to be part of that journey.
