This month, we’re excited to sharing two contrasting lots from Huehuetenango, some our first releases of the season, illustrating the variance of profiles we find here.
Huehuetenango is a beautiful and isolated region in the north of Guatemala, next to the border with Mexico. Even within this single region, the variance between the everyday realities and the resulting profiles is huge.
Baltazar Mendez
Baltazar Mendez produces coffee in Huehuetenango; a very clean and crisp washed lot, with a grape-like acidity and toffee-like sweetness.
Las Gardenias
The floral aromas of the Geisha varietal come through in the cup, followed by ripe currant notes and a deep and caramel-like sweetness enhanced by Eddy Lopez' careful natural processing.

Last month, we shared two coffees that had both been processed with protocols that have only recently become popular in their respective countries. In Chelbesa, an anaerobic lot from SNAP coffee’s station in Yirgacheffe, we found a deep sweetness reminiscent of overripe berries underpinning the aromatic top notes. With Antonio Gonzalez’ Nueva Montaña, a natural Catuai, showcased notes of ripe blueberry and sweet dark chocolate.
