Individual doses are ground and sealed in nitrogen-flushed packages, maintaining the clear aromatic character of freshly ground coffee, for over a year after roasting.

Colombia
Colombia is and will continue to be one of the world’s most exciting countries for speciality coffee. Colombia produces a huge volume of coffee; second only to Brazil, and far ahead of Ethiopia. The potential for quality is immense, and the population at large feel a genuine pride in their coffee growing heritage.
In recent years, the directness and willingness to embrace change, alongside the wealth of knowledge and talent in the producing community has led to excellent coffees, with a huge pallet of flavour profiles.

Potosí
Finca Potosí is the original Granja farm, and one that we have come to hold dear over the years. We have visited the beautiful valley that forms the Las Margaritas and Potosí farms several times, and the natural XO lot from Potosí has become a stalwart in the La Cabra line-up.
This is the eighth year we have purchased this particular lot from Cafe Granja, a coffee that illustrates Granja’s continuing commitment to set a new standard for flavour enhancement through post-harvest processing. This lot of the San Juan varietal is grown on the original Granja farm, Finca Potosí. The team at Potosí and Las Margaritas, just outside the town of Caicedonia in northern Valle, are constant innovators, even creating their own hybrid varietals through manual cross pollination of trees.

Medina Espejo
Medina Espejo is a tiny 2 hectare plot where Mauro Tulcan grows coffee perched on a steep mountainside in Buesaco, in Colombia’s mountainous Nariño region. We have come to appreciate coffees from Nariño over many years, for their dense sweetness and intense, concentrated flavours in the cup, with a high degree of clarity. Incredibly high altitudes, often over 2000 masl, and excellent sun exposure mean sugar-rich, slow-matured coffee cherries, with ample fuel for fermentation and roasting to create complexity and intensity.
