Brewing Advice

Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 150 ppm. 

Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.  

We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.

Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. Mogiana

Mogiana is a region of the State of São Paulo, one of the most populous and economically important states in Brazil. It is home to the port of Santos, where much of Brazil’s coffee is exported. The region was named for the railway company that built the rail network in the region. ‘Companhia Mogiana de Estradas de Ferro’ built the so-called ‘railway of coffee’ in the 1880’s, and to this day it carries much of Brazil’s coffee exports to Santos. The railway, as well as the excellent climatic conditions have led to a great deal of coffee being produced in Mogiana. In a Brazilian context there is plentiful high altitude, and a constant temperature of around 20°C year round leads to consistently well balanced and high quality cups.

Vale das Flores

Lago Ribeiro grows coffee at 1100 masl in Alta Mogiana, the mountainous sub-region on the border to Minas Gerais, where many of the Brazilian coffees we work with are grown. Lago’s family history in coffee goes back four generations and over 100 years. They have owned Vale das Flores during this whole period, continually improving and taking advantage of the potential here. The farm is named for the Ipê trees that form much of the farm’s shade; their beautifully coloured flowers provide an incredible sight in the valley during the spring.

This lot of natural Paraiso was processed on the farm, dried slowly on patios over 8 days. This gives a traditional profile of caramel, hazelnut and red apple.
