Brewing Advice

Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 50 ppm.

Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.

We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.

Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. Hacienda La Esmeralda

Hacienda La Esmeralda is one of the most celebrated farms in specialty coffee. It was originally established as a cattle farm in the mid-20th century, and became internationally recognised in 2004, when the Peterson family broke the world record for the highest price paid for a coffee lot with their first release of Geisha. This marked a turning point for the variety and brought it to the attention of the coffee world. Geisha is a native Ethiopian variety, first collected in the Gesha region in the 1930s. It was later studied in Kenya and Tanzania, and brought to Panama for its resistance to leaf rust. The Peterson family rediscovered its potential in 2004, and it has since become one of the most sought-after varieties in specialty coffee.

Hacienda La Esmeralda has continued to make its mark at the Best of Panama, becoming one of the competition’s most decorated farms. In 2025, they won all three categories and set the all-time scoring record twice, with 97 points for their Natural Geisha and 98 points for their Washed Geisha. This Porton lot offers a rare opportunity to experience the work of one of the world’s most celebrated coffee farms.

El Velo and Porton

El Velo was purchased by the Peterson family in 2012 and is the newest addition to Hacienda La Esmeralda. Porton is a 6.5-hectare plot, located at the entrance to El Velo, at an altitude of 1700 masl. The climate is relatively cool, influenced by Panama’s Atlantic coast, while the high altitude slows cherry maturation. This slow ripening period contributes to intensity and sweetness in the cup. The 2026 harvest was exceptionally small, making this a particularly limited lot.

Washed Geisha

A careful washed process highlights the Geisha’s clarity and floral character. This lot opens with aromatics of jasmine and citrus blossom, followed by notes of Meyer lemon, white peach, honey and black tea. A light, silky body is balanced by a bright, citrus acidity and sweetness reminiscent of honey and brown sugar.
