Brewing Advice

Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 50 ppm.

Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.

We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.

Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. La Divina Providencia

La Divina Providencia was first planted in the late 19th century and later abandoned for many years. Fifteen years ago, Roberto Ulloa took it on and has since pieced the farm back together from small, forgotten plots between 1600 and 1830 masl. What was once a patchwork of neglected land has become one of the healthiest and most beautiful farms in the region. Roberto manages La Divina using conventional farming practices with organic inputs. The plants are pruned using traditional methods and grown with multiple stems through the Parra System.

A farm in the volcanic highlands

La Divina sits in the Palo de Campana micro-region of Apaneca-Ilamatepec, in the volcanic highlands around Santa Ana Volcano. The rich volcanic soil and local microclimate create conditions for slow maturation, allowing the Geisha cherries to develop fully before harvest, which runs from January to April.

Anaerobic Natural processing

Coffee is selectively handpicked and processed on Roberto's farm. Ripe red cherries are laid on raised drying beds and turned frequently to ensure even drying, taking roughly 20 to 30 days to dry. This lot gives notes of green apple and chocolate, carried by a smooth body and crisp malic acidity.
