Brewing Advice

Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 50 ppm.

Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.

We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.

Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. Fredy Orantes

Fredy Orantes is an experienced producer who works with both larger lots and small microlots at Buena Vista, with a focus on care in every stage of picking and processing. Sustainability is central to his approach to farming. He maintains the soil with compost made from fallen leaves, branches and coffee pulp, and carefully manages the variety of trees across the farm. Grevillea and cuje are the most common shade trees, alongside a range of fruit and native species. The farm is left unfenced, allowing native animals and birds to move freely through the land.

Buena Vista

Buena Vista sits at 1870 masl in the Fraijanes region of Guatemala, with annual rainfall of around 2300 mm and temperatures between 13 and 29°C. The coffee grows under shade from Grevillea and avocado trees, alongside cuje, fruit and native species.

Natural Pacamara

Only the ripest cherries are hand-picked and placed in clean sacks to ferment for around 48 hours. They are then spread across raised beds to dry in Fraijanes’ abundant sunlight. Drying takes 25 to 30 days, with the cherries turned frequently to ensure an even result. Once dry, the coffee is stored until it is ready to be delivered to the mill for dehulling and export.
