Brewing Advice

Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 150 ppm. 

Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.  

We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.

Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. Stefan Müller

Stefan Müller was born in Colombia, but moved to Panama early in his life. He wasn’t involved in coffee until he met his wife, a Boquete native whose family has been in coffee for generations. Stefan fell in love with the region and with the craft of coffee, eventually jumping at the opportunity to purchase farm 14 years ago, together with a friend, Benjamin de Dianous Henriquez. Benjamin is well known in Boquete, where he has contributed greatly to the local coffee community. In Boquete he is affectionately known as Don Benjie.

The farm had been abandoned by the previous owner, and required renovation and replanting. The shade layer was however intact, and numbered several species of fruit trees, oaks, and native shade. Stefan preserved these, leading to a calm, cool, and natural atmosphere on the farm. There were also several varietals of coffee present, including Orange Bourbon and Maragogype. Stefan set about planting more coffee, mainly Geisha, but also small plots of Catuai, Pacamara Mokka and SL28.

Don Benjie have also experimented with processing, with the help of a local Boquete beer brewer, diving into new fermentation techniques in order to enhance their work, especially with varietals other than Geisha. They have finished in the top 10 of the Best of Panama varietals category three times, in 2020, 2024 and 2025.

The Best of Panama

Don Benjie have also been working with consultant and processing specialist Manuel Barsallo. Manuel visited us in Copenhagen in the summer, and presented his work from the most recent harvest, including this lot of natural SL28. This is the sister lot to the lot that came in 5th in this year’s Best of Panama varietals category, scoring 91 points and selling for over $500/kg. The process is exactly the same as that lot, and this lot finished drying only a week later, meaning it was too fresh for the competition. The SL28 cherries were first fermented in open tanks for 24 hours, before drying very slowly in a climate controlled dark room over 7 weeks.

This leads to a complex profile of wild blueberry, molasses, fresh raspberry and dark chocolate, one of the finest non-Geisha coffees we have tasted from Panama.
