Coffee Expression This is a new endeavour, a little further from home. In this blend of two lots from Ethiopia and Guatemala, we have more fresh fruit, more acidity, but still a deep sweetness and integrated structure.

Profiles Luna is a brighter take, the direct reflection and contrast of Terra, a new step on our journey in coffee, suited for espresso, smaller espresso and milk drinks, or batch brew.

Profiles 

Though the world of coffee moves at a fast pace, we create constant taste profiles that we can return to throughout the year. Profiles is a place to come home to, the base on which we can build the rest of our coffee journey. 

The two taste profiles Terra and Luna, are created with intention; to enable complex and characterful espresso-based drinks, and comfortable filter coffees.

Sometimes blended, often a single lot, these two profiles allow us to maintain the highest quality by loosening our previous focus on Brazilian lots. Read more here

Brewing Advice

Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 150 ppm. 

Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.  

We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.

Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. Luna is a brighter take, a reflection on our philosophy, and a step on our journey in coffee, and is suited for espresso, smaller espresso and milk drinks, or batch brew.

This is a new endeavour, a little further from home. Here we have more fresh fruit, more acidity, but still a deep sweetness and integrated structure. Luna is combined to promote the character of washed Ethiopia, Guatemala, Costa Rica, or often a single larger lot.

Refisa

This washed lot was processed at SNAP Coffee’s washing station in the town of Refisa, located in the Nansebo area, close to Sidamo. Coffee for this lot was delivered by 742 smallholders in the towns of Refisa, Roricho, Bulga, and Riripa. 

The processing for this lot is typically Ethiopian, with a long, slow fermentation of up to 60 hours, creating a soft and complex expression in the cup. In the case of Refisa, this creates a deep sweetness, reminiscent of tinned peaches, underpinning the aromatic top notes of jasmine and citrus.

Luna - Ethiopia

Brazil has faced increasing instability in recent years, driven by climate extremes and vulnerabilities in intensive agricultural systems, making it harder to secure consistent quality at acceptable prices.

As a result, we reassessed our approach to espresso sourcing, as fewer Brazilian lots met our standards for balanced, characterful milk drinks. 

With Profiles, our goal is to deliver this experience year-round, widening our sourcing across the coffee belt - often blending carefully selected lots - to maintain both quality and a consistent profile.

Chacayá

This lot is an excellent example of this area of Guatemala, as Chacayá has a lower acidity and a more approachable profile than coffees from the Huehuetenango highlands, with milk chocolate, cherry and hazelnut notes.

Chacayá is produced on a patchwork of plots run by 150 smallholder producers. The Chacayá lands sit at 1500 masl looking over Lake Atitlán, in the municipality of San José Chacayá, Sololá. The former Chacayá estate was gradually passed on to local families during Guatemala’s post colonial land reform in the 1950’s, people from Xela, Chimaltenango, and Sololá.
