
Terra is a comforting cup, a grounding and familiar experience, and suited for espresso, espresso and milk, or batch brew.
This is the closest replacement for our current Brazilian coffees, with chocolate notes, great sweetness and soft ripe fruit character. These coffees have been brought together for a reason, an intentional combination of lots from natural Brazil to natural Ethiopia or El Salvador, or even a single larger lot.
Chapadão de Ferro
A natural Catuai by Marta de Paula Borges, produced on the slopes of a former volcano in the Cerrado Mineiro region. Typically for Brazil, this lot is processed as a natural, unveiling a deep sweetness, with notes of almond and toffee punctuated by bright citrus.
Marta de Paula Borges owns two coffee farms, both rather small by Brazilian standards. We have worked with coffees from both in the past. This lot is from a 46 hectare plot on the Chapadão de Ferro volcano, while the family also run the even smaller Fazenda do Retiro, located slightly further to the South. This lot is of the Catuai varietal, seen across Brazil due to high yields and excellent quality potential.
Brazil has faced increasing instability in recent years, driven by climate extremes and vulnerabilities in intensive agricultural systems, making it harder to secure consistent quality at acceptable prices.
As a result, we reassessed our approach to espresso sourcing, as fewer Brazilian lots met our standards for balanced, characterful milk drinks.
With Profiles, our goal is to deliver this experience year-round, widening our sourcing across the coffee belt - often blending carefully selected lots - to maintain both quality and a consistent profile.
Chelbesa
Chelbesa has a deep sweetness, reminiscent of ripe berries and stone fruit, underpinning the aromatic top notes we associate with Ethiopian coffees.
This natural lot was processed at SNAP Coffee’s station in the village of Chelbesa, located in the Yirgacheffe region. Coffee for this lot was delivered by smallholders surrounding the village, before undergoing natural processing with SNAP’s meticulous team. During our trip to Ethiopia in February, we cupped several tables of excellent coffees from this year’s harvest at SNAP’s headquarters in Addis Ababa.
