Brewing Advice

Water is one of the most critical components of an excellent coffee experience. We recommend using mineral water of a soft Total Dissolved Solids count, ideally below 150 ppm. 

Rested coffee During the resting process, harsh and astringent flavors, which can even be perceived as a ‘roast’ character, soften out, allowing a clearer and brighter expression of the coffee’s character to shine.  

We recommend resting our coffees for at least 10 days after the roast date, and we often find excellent results, especially for particularly dense coffees, beyond 6 weeks.

Brewing Our straightforward approach to coffee carries over into brewing. We recommend our roasted coffee for all brew methods, regardless of whether it is immersion, percolation or espresso. We believe that there is one correct way to roast a single coffee, roasting lightly, in such a way as to release its innate qualities and showcase its quality. This lot is produced by smallholder farmers around Shantawene, in the Bensa district of Sidama.

Shantawene lies between Bombe village and Bombe Mountain where coffee is mainly harvested by small-scale producers on the steep mountain slopes. Locally these producers are often described as “garden farmers” who grow coffee on small plots surrounding their homes and harvest cherries from trees growing on the land where they live.

Coffee production in Shantawene is closely tied to the smallholder system found throughout Ethiopia. Rather than large estates, coffee is grown in garden plots surrounding producers homes, often alongside other crops and beneath established shade trees. This small-scale system, together with the altitude and fertile soils of Bensa, provides the conditions for careful production of high-quality coffee.

Coffee here grows at high altitude, between 2000 and 2230 masl, in fertile Nitisol soils under the shade of the indigenous Wanza, Shola and Tsid trees. The area surrounding Shantawene experiences two distinct rainy seasons. The shorter Belg rains arrive from late February to May, followed by the main Kiremt season from June to September. Together these rains support the lush vegetation and coffee production characteristic of this part of Sidama.

This lot is composed of the Ethiopia heirloom variteies 74110 and 74112. After careful harvesting the cherries are processed naturally and then dried on raised beds before being carefully sorted and prepped for dry milling.

The producers contributing to this lot are members of the community surrounding Shantawene Kebele, where both Sidaamu and Amharic are spoken. Shantawene sits close to Bombe Mountain, within the high-altitude landscape of Bensa.
